Meeting his Mom
Paul took me to Van Hook to meet his Mom and StepDad yesterday. It went well and tonight I'm meeting his Dad's side of the family. I already met his Dad but tonight his StepMom and some Aunts and Uncles will be there along with two of his siblings and their spouses and kids. I've met his brother and his wife and have been friends with his sister and BIL for years so it should be pretty relaxed, thank goodness :)

Here's the recipe, as I said, I'm going to add potatoes somehow...I'm sure you'll manage to figure out a way as well, if you want!
Steep Hill Grill's Corn and Scallop Chowder
1/2 c. smoked bacon, diced
1/2 c. onions, diced
1/2 c. leeks, diced
1/4 c. celery, diced
1/3 c. butter, melted
1/4 c. all-purpose flour
1 1/2 c. water
2 c. corn kernels
1 1/2 c. half and half
3/4 c. fresh scallops, cut into small pieces
2 T. fresh chopped basil
salt and pepper to taste
garnish:
4 T. softened butter
1 T. chopped basil
Mix softened butter and basil together for garnish and set aside.
To make the chowder:
Brown the bacon in a skillet with 1/2 of the butter. Add the onion. leeks, and celery. Cook until transparent. Add the remainder of the butter, then add the flour. Stir until the butter and flour are mixed; then add the water. Stir until this mixture thickens. Add the corn, half & half and scallop pieces. Simmer until the scallops are cooked. Add the salt and pepper to taste. Add the 2 T. basil five minutes before serving.
Top with the basil-butter mixture and serve. 6-8 servings (that's what they say, lol!)

Well...Dick was rather skeptical to start but ended up having seconds! Guess that means he liked it, eh? I brought crusty French bread to have with and that was a hit too. Ended up with apple turnovers for dessert and gave him two of those and some banana bread to take home for him and his mom to share. He told me this morning he had two slices for breakfast and warned Mom if there was any there when he got home it was fair game :)
I did use a few potatoes in my chowder and it came out great! The broth (if you call it that in a chowder) is very tasty with all the leeks, onions and celery...totally yummy!!
Now I want turkey dinner, please!! I'm making chicken pot pie today...won't be like my Dad's but I'm sure it will be good just the same!
